Easy, Anytime Turkey Casserole

  • 1 LB 93% Lean Ground Turkey
  • 400 grams broccoli (I used a family-size, steam-in-bag)
  • 1 head cauliflower (750 grams for me), riced
  • 400 grams white mushrooms, chopped
  • 3 large eggs
  • 300 grams egg whites
  • 1 cup (240 ml) unsweetened almond milk
  • 15 grams all purpose flour
  • salt, pepper, and other preferred seasoning (I used McCormick Roasted Garlic and Herb)


1. Pre-heat oven to 375

2. Cook turkey on stove top, season to taste

3. Combine turkey, broccoli, cauliflower, and mushrooms in a large baking dish

4. Mix together eggs, egg whites, milk, all purpose flour, salt, pepper and other spices if using

5. Pour wet ingredients into the baking dish over the meat and veggies

6. Bake for 1 hour or until cooked through

7. Get yoself a fork and enjoy easy breakfast, lunch, or dinner all week

Tweak it: sub or add more veggies like brussels sprouts, spinach, onions, or tomatoes, swap the turkey for ground chicken, add cheese for extra fat before cooking or sprinkle on top after heating and before eating.
